Frugal Friday

Meatloaf Madness

Lets see..thus far the best deal I have gotten this week was the ground beef for 99 cents a pound at Food Lion - I still have a pack I need to get in the freezer, but 80% of one pack went to make 5 meatloaves. One was eaten last night and the other 4 are in the freezer.

Let's see:

Ground Beef - approx $ 4.50
Onion - $ .12 - about one onion from a 25 pound bag that was .60/pound
Green Pepper $ .50
Sleeve of Ritz $ .00 - part of a box from a buy one get one free sale
Can of diced tomatoes $ .00 - another buy one get one free
Can of tomato sauce $ .33 - on sale 3 for 1.00

TOTAL $ 5.45 divided by 5 loaves = $1.09 per meatloaf!

Now its on to CVS this weekend to try to use my first ever extra care bucks and get some deals from them! Until Next Frugal Friday.....

Recipe Du'Jour!

May 28th:

SPANIKOPITA

1-10oz box frozen spinach
1 teaspoon olive oil
3 green onions, chopped
2 tablespoons fresh dill, chopped
4 tablespoons feta cheese, crumbled
2 eggs, beaten
salt, to taste
black pepper
1/4 cup butter (melted)
12 sheets phyllo pastry
1 pinch ground nutmeg

-Thaw spinach & squeeze out all excess moisture and set it aside.
-Heat oil in a saucepan and add onion, spinach and dill. Cook on high for 3 minutes until onions soften. Remove and cool.
-Combine the cooled spinach mixture with feta, eggs and salt and pepper. Set aside.
-Work with ONE sheet of phyllo at a time.
-Brush half sheet (lengthwise with butter and fold the sheet in half, brush with butter again. Lay strip down vertically in front of you.
-Spoon a heaping teaspoon of filling in bottom corner of strip.
-Fold over in half diagonally creating a triangle. Continue folding over into triangular shape until you reach end of strip.
-Repeat with remaining strips.
-Brush tops with a little more butter.
-Place triangles on a baking sheet and bake at 375 for about 15 minutes until golden.

Yield - 12 triangles

May 26th:

QUNITUPLE CHOCOLATE BROWNIES

1/2 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon salt
1 stick (8 Tablespoons) unsalted butter, cut into 8 pieces
3 ounces semisweet baking chocolate, coarsely chopped
3 ounces sweetened baking chocolate, coarsely chopped
2 Tablespoons strong coffee
1 cup sugar
3 large eggs
1 teaspoon pure vanilla
6 ounces premium-quality milk chocolate, chopped into chips, or 1 cup store-bought milk chocolate chips
1 cup chopped nuts (optional)

For the Glaze:6 ounces premium-quality white chocolate, finely chopped, or 1 cup store-bought white chocolate chips
1/3 cup condensed milk

Line a 9-inch square baking pan with foil, butter the foil and place the pan on a baking sheet.

-Sift together the flour, cocoa, and salt.
-Double boil in the following order, the butter, the two chocolates and the coffee. Stir gently, and when the mixture is smooth, set it aside for 5 minutes.
-Using a whisk or a rubber spatula, beat the sugar into the chocolate mixture. Next, stir in the eggs one at a time, followed by the vanilla, then stir in the dry ingredients, mixing only until they are incorporated. Stir in the milk chocolate chips and the nuts. Scrape the batter into the pan.
-Bake for about 35 minutes at 325, or until a thin knife inserted into the center comes out streaked but not thickly coated.
-Transfer the pan to a cooling rack and let the brownies rest undisturbed for at least 30 minutes.
-Turn the brownies out onto a rack, peel away the foil
-Invert the brownies onto the rack and let cool completely.

Glaze:
-Melt milk and chocolate together in microwave until melted. Stir.
-Refrigerate the brownies for about 20 minutes to dry the glaze.
-Cut into 16 squares, each roughly 2-1/4 inches on a side.

May 21st:

CANTALOUPE BREAD WITH PRALINE GLAZE

- I got this recipe from allrecipes.com about 2 years ago and Randall has never stopped talking about it. We got a bum cantaloupe from the farmers market over the weekend, and instead of tossing it, I decided to surprise him....

3 eggs
1 cup vegetable oil
2 cups white sugar
1 tablespoon vanilla extract
2 cups cantaloupe - peeled, seeded and pureed
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
3/4 teaspoon baking powder
2 teaspoons ground cinnamon
1/2 teaspoon ground ginger

1/2 cup butter
1 2/3 cups brown sugar
1/2 cup chopped pecans

-Preheat oven to 325 degrees F (165 degrees C). Lightly grease and flour two 9x5 inch loaf pans.
-In a large bowl, beat together eggs, vegetable, sugar, vanilla and cantaloupe.
-In a separate bowl, sift together flour, salt, baking soda, baking powder, cinnamon and ginger.
-Stir flour mixture into cantaloupe mixture; stir to combine.
-Pour batter into prepared pans.
-Bake in preheated oven for 1 hour, until a toothpick inserted into center of a loaf comes out clean.
-Meanwhile, combine margarine and brown sugar.
-Microwave for 3 minutes, stirring at 1 minute intervals; mix in pecans.
-Pour sauce over warm bread. Let cool for 1 hour before serving.

May 18th:

BREAKFAST FRITATTA

- not bad for a made up on the fly thing!

5 eggs, beaten with a tablespoon of ketchup
2 small potatoes, thinly sliced with skin on
1 thinly sliced bell pepper
1/4 thinly sliced red onion
3 slices of turkey bacon, crisp and crumbled
1 c. cheddar cheese
salt and pepper to taste

layer potato, pepper, onion, bacon and cheese in a 9 in. pie dish
pour eggs over mix
bake at 325 degrees for 40 minutes

May 17th:

PINK SPAGHETTI

- this is one of those make in a hurry kind of meals, but its still good!

One jar of alfredo sauce
One can mild Rotel Tomatoes
1 lb steak, cut into thin strips, like stir fry
1/2 tsp. garlic pepper
8 oz pasta

- season steak with garlic pepper and brown in skillet, drain any excess fat
- add Rotel with liquid, heat through
- add jar of alfredo, heat through
- pour over cooked pasta
